Are you suggesting the example you provided "Doe, Jane" is not consistent in all the records? If not, then you really need to provide a good sampling of your data values when you ask your question.
IMO: you should never store last and first names together. I always create at least FirstName and LastName and might even add middle name/initial as well as prefix and suffix depending on requirements.

I think its going to be needed. I am dealing with 1500 record table of Native American names. So the name can be like Grey Eagle, John or Good Shield, Grace....
