The default format for date/time fields is Short Date, and that inherits the format from the system International settings. If you get your company's Windows gurus to do a blanket change to everyone's date format setting in Windows, you have nothing to do. If not, then you have to go to every table that has a date/time field and override with a custom dd-mm-yy setting.
