How do I select the list box item and in return filter the appropriate subform with the selected item.

Use the table that lists all the document types as the Row Source of the List Box. If you add a document type, it'll appear in the list the next time you open the form. You can use the List Box as the Link Master Fields of your subform to do the filtering.

I am thinking there would be no more than 20 entries max. Once they select the document type, I will present them a continuous subform that contains all the documents of that type.

While you can certainly bind an Option Group to a field that has integer values, an Option Group is a static control. You can't add new values without editing the design.
