Thank you Duane / Crystal. Your assurances were much appreciated while I was being berated by management. 
We rolled back to the previous version of Office 365 & peace is restored (for the time being :-) )
Originally I was being told by IT that they didn't let 365 update itself when it wanted (they controlled when a patch was installed). Seems that wasn't what was happening in real life.
