I can't recommend developing in VMs enough Liz. It's wonderful, except, if you are trying to use some of the "clever" stuff like "Unity" in VMWare where the software makes it look like the two machines are one so that you have some windows are from the VM and some are from the host, Yucky Yucky Yucky, in my opinion.
One of the best VBA development environments I ever had was a 27" iMac with three VMs (usually not all running at the same time but often two at a time) where one was Access 2.0 development, one was Access 2000 Dev, and the third was Access 2007. Each VM just had the development and deployment tools required for the specific version.
Furthermore, when you do get a new machine, you just move the VM onto it, no more reinstalling and configuring the environment.
You do need a "fat" enough host machine but "fat" enough depends on what you are doing and if you are going to be working on the host and in VMs at the same time.
