Tim,
Most of us MVPs and other seasoned developers believe a table with more than about 30 fields is probably not normalized. Having over 255 fields seems to suggest an issue with your table structure. I could be wrong since I don't know anything about your business requirements or specifications.
I had thought you might be able to use a pass-through query to render more than 255 columns. I created a test database in an SQL server and then attempted to view all the fields using a P-T. I got an error message "Too many fields defined".
