No, the limits stay because you are using JET/ACE to fetch the data. Maybe if you were to use pass-through queries you could get more fields, but I can't say.
But you can break SQL tables up into views if their columns exceed the 255 limit. And I would question the need to have more than even 50 fields in a table.
