If you've designed any forms or reports in 2010 containing a control layout, you won't be able to open those forms in 2007. You can, however, use my FixBroken utility to remove the controls that 2007 doesn't recognize to go back to 2007.
Not to mention you could lose code if you try to reopen it back in 2010, and you could end up with back end tables that say unrecognized database format.
Make backups.
