If all of your users have Access 2010 then I would use it because it has proved to be more stable and has better features that work with Office 365 and SharePoint. But in case you are not aware of this databases that have been opened by Access 2010 rarely can be opened using Access 2007. And it is virtually impossible for people that use 2007 to open databases developed using Access 2010.
