I change the default to 50. It is set it that big, imo, for those who don't know how to make it small so the field has less chance of being too small
Even 50 is too big for many fields. My testing has shown that performance benefits from smaller text fields.
There are some who will tell you that it does not matter since variable length text is stored ... but it does. Compact/Repair your database. Then shorten text fields (but not any actual data) in tables that have lots of records -- when you C/R again, you should notice a difference. It also makes a difference in performance. I have had situations where complex queries linked on text fields would not run until the allowable field size in the table design was made smaller.

That means that as I create a filed in a table and set its size paramet to ..say 50....I do indeed get a size of 50 characters, and thus a disk space saveings ?
